When I was an undergrad in college, I had a budget of 15 dollars a week for food. Some how, I made it work. One of the things I did was make my own syrup. I didn't mind because I like it better than maple syrup anyways. But then, that foam you see at the top became my 'jam and jelly' for all my sandwiches and toasts. It thickens up in the refrigerator and becomes nice and spreadable. I like to call it my poor man's jelly.

Buttermilk Syrup
1 stick butter
1/2 cup buttermilk
1 cup sugar
1/4 tsp. baking soda
1 tsp. vanilla
Melt butter in saucepan. Add buttermilk, sugar, and baking soda. Bring to a boil, then almost instantly remove from heat and add vanilla.

ReplyDeleteThis is our favorite syrup too. But if you are like us we don't always have buttermilk in our fridge. So, I use milk and sour it with a cap full of vinegar! It tastes just the same and foams the same too!
