Mr. Jiggs loves my recipes...but does not like their organization. Currently, I have a binder with lots of family recipes in page protectors, and a ton of others I've collected off the internet just slid in and sliding around loose. He thinks it's a disaster...and he's right. He can't find anything and has given up trying. His dream is to have all my recipes in a database program called Bento and then have an iPad in the kitchen so I can look them up and use them easily. Of course they have to have a picture to go along with them to show off the dish.
This won't happen for many MANY years, but I've had typing up recipes on my list for years. I've only done around 20.
So...my new goal is to make and share one recipe a week so that my recipes slowly get digitalized and ORGANIZED!
Here's the first recipe: Cheeseburger Rice. This was a family favorite growing up and Mr. Jiggs and the little piggs also love this dish. It's a great way to use up leftover rice and is seriously addictive. When we made it earlier this week, I kept wanting to eat more even though I knew I'd had enough and my tummy should be satisfied.
Cheeseburger Rice
1 lb. ground beef-cook and drain
1 sm. onion-chopped (or 2 Tbs. dried minced onion)
1/2 cup catsup (do not substitute tomato sauce)
2 Tbs. mustard
1/2 tsp salt
1/8 tsp. pepper
2 1/4 cup cooked rice (or 1 1/2 cup min rice and 1 1/2 cup water)
1 cup shredded cheddar cheese
Combine all but cheese in a frying pan. Mix, then top with cheese. Cover with a lid and cook as low as you can until the cheese is melted, but it doesn't burn on the bottom. Serve with dill pickles, tomatoes and lettuce.
since losing my cookbooks when we moved I've been a lot better at putting my recipes in Bento. But having an iPad in the kitchen would make that a lot nicer too.... some day in the distant future :)
